Spanish-Style, Fried Garbanzo Beans
Serves 2
4 teaspoons olive oil
1 small onion, diced small
1 medium red pepper, cored, cleaned, and diced small
1 large carrot, peeled and diced small
2 small garlic cloves, minced
Salt
1 large egg, lightly beaten
1 15-ounce can garbanzo beans, drained and rinsed
2 heaping tablespoons roughly chopped parsley
1/4 teaspoon freshly ground pepper
Over medium-high heat, warm a medium skillet. When pan is hot, (hold your hand 4-inches above the skillet, if there is strong heat, you’re ready, add olive oil. Swirl olive oil, after about 45 seconds, when shimmering, add onion, red pepper, carrot, and salt to taste. Sauté until soft and slightly golden, about 10 to 12 minutes. If the mixture begins to darken or burn, lower heat slightly. When vegetables are soft, clear a hole in the center of the pan. Add garlic, and sauté until the seasoning releases its aromas, about 30 seconds. Toss all vegetables in pan.
If you lowered the heat, raise it back to medium high. Add garbanzo beans and a touch more salt. Sauté, tossing pan or stirring occasionally, until garbanzos are golden brown and the skin on the beans begins to break, about 8 minutes. Mix in egg, and stir constantly until it is lightly scrambled, about 30 seconds. Remove from heat and stir in parsley and ground pepper. Taste for seasoning, and add more salt if necessary.
