Peruvian Pisco Sour

Serves 1

  • 3 ounces Peruvian pisco, preferably Macchu Pisco
  • 1 ounce freshly squeezed key lime juice
  • 1 ounce simple syrup
  • 1 very fresh egg white
  • 4-5 ice cubes
  • Angostura bitters

Combine pisco, key lime juice, simple syrup, egg white, and ice in cocktail shaker. Shake vigorously for 30 seconds to a minute, until cocktail is evenly frothy. Strain and pour into a rocks glass.* Decorate with a few drops of bitters.

*Peruvians would pour this into a rocks glass, but I don’t own one. That’s why you see an elegant wine glass in the photos.
