Cardamom Granola

Makes about 8 cups

The delicate, warm spice of this homemade granola pairs well with tangy yogurt. Try it over Greek or the Australian-style Noosa yogurt. Also, if you have a spice grinder, consider grinding your own cardamom seeds to bring even more soft spice to your cereal.

Nonstick vegetable oil spray
4 cups old-fashioned oats
1 cup sliced almonds with skin
½ cup dark brown sugar
¼ teaspoon salt
1 teaspoon ground cardamom
1/3 cup vegetable oil
¼ cup honey
1 cup golden raisins

Position rack in the middle of the oven, and preheat oven to 300 degrees. Lightly spray a large baking sheet with vegetable spray. In a large bowl, combine oats, almonds, sugar, salt, and cardamom. Stir until well mixed. In a small saucepan over medium heat, bring oil and honey to a simmer. Pour over oat mixture, and using your hands, toss until thoroughly combined.

Spread mixture evenly over prepared baking sheet. Bake stirring occasionally, until golden brown, 30-35 minutes. Allow granola to cool, and stir in raisins. Store in airtight container for up to two weeks.
