Arroz con Leche with Roasted Rhubarb

Serves 4-6

Start the rhubarb first. Then, while it’s in the oven, make the rice pudding.

For Roasted Rhubarb:

1 pound rhubarb
1 tablespoon orange zest
3 tablespoons freshly squeezed orange juice
½ cup sugar

For Arroz con Leche:

1 medium orange
1 3-inch cinnamon stick
6 tablespoons sugar
1 cup basmati rice
½ teaspoon salt
4 3/4 cups whole milk
Butcher twine

To Make Rhubarb:

Preheat oven to 350 degrees. Arrange rack in the middle of the oven.

Trim leaves off rhubarb and wash. Cut rhubarb into 1-inch pieces. Combine orange zest and juice, as well as sugar, in a medium bowl. Toss with rhubarb, until the pieces are well coated. Distribute rhubarb mixture in an 8-inch, square baking pan, and cover with tin foil.

Bake for 35 minutes, until rhubarb is very tender and juices are bubbling. Remove tin foil, and bake another 20-25 minutes, or until the juices are syrupy. Take out of oven, and cool slightly, allowing juices to thicken.

To Make Arroz con Leche:

Using a vegetable peeler, remove the zest from the orange. Take care to peel only the zest, and not the pithy, bitter, white interior.

Tie the orange zest and cinnamon stick together with butcher twine. Add this, along with the sugar, rice, and salt to a large saucepan. Over medium heat, combine with milk, leave uncovered, and bring to a boil, stirring occasionally. (In Colorado, where high altitude draws out the boiling time, this step took 20 minutes.)

Reduce heat to low and cover. Simmer, stirring frequently, until rice is tender, about 45-50 minutes. (As the pudding starts to come together, you will need to stir more frequently. If you find yourself stirring aggressively toward the end, you may want to remove the orange zest and cinnamon so it doesn’t fall apart in the pudding.)

Remove arroz con leche from heat, leave covered, and let rest 5 minutes.

To Serve:

Top warm, or room temperature, pudding with a generous serving of roasted rhubarb.
